A trick i have found when i make my banana peppers is to soak the peppers in a salt brine 2 cups water 2 tbs salt and while soaking cover with ice.

Pour hot vinegar water mixture over the peppers.

Press the peppers down in the jar and repeat.
Stir until the mix is completely dissolved and nearing boil then remove from heat and allow the brine to cool to room temperature.
After reading up on what others have done i decided to try the open kettle food processing method instead of a hot water bath.

If you like super thin pepper rings i suggest you use a mandoline slicer.
How to pack banana peppers for pickling.
Place the pickling spices in the bottom of the canning jar.
Then pack raw peppers into hot jars leaving 1 2 inch head space.
7 repeat with remaining peppers and jars.
